I don't know about a uniion, but New Zealand is pretty organized, with its NZ Prostitutes Collective. Maybe that is a sort of union.

A lot of the so called "issues" our govt seems to be fear mongering was dealt with in NZ due to the collective working for years before decrim and afterwards.
